White Chicken Chili
Warm up with this easy and comforting Crockpot White Chicken Chili. Made with tender shredded chicken, creamy white beans, mild green chilies, and a blend of spices, this chili is slow-cooked to perfection. It's a hearty, flavorful meal with a subtle kick, perfect for cozy nights. Top with fresh cilantro, shredded cheese, and a squeeze of lime for added brightness.
Ingredients-
- 1lb chicken breasts (~2 large chicken breasts) 
- 1 can great northern beans, drained and rinsed 
- 1 can cannelini beans, drained and rinsed 
- 4oz can chopped green chiles 
- 1 - 2 fresh jalapenos, seeded then minced (use 1 made for a mild chili) 
- 1/2 onion, chopped 
- 2 bell peppers diced 
- 1 packet taco seasoning 
- 1 can corn, drained 
- 6 cups bone broth (or chicken broth) 
- 2 limes; juiced 
- 1 cup diced cilantro 
Directions-
- Add all ingredients into a crock pot then stir to combine. Cover and cook on LOW for 4-6 hours or until chicken shreds easily. 
- Remove chicken, shred, then add back to the crockpot. 
- Top with- sour cream, hot sauce, diced cilantro, cheese, or sliced jalapeno.
