Sesame Garlic Noodles
Asian noodle dishes are always welcome on my weekly meal plans. This recipe is quick, hearty, and require just a few ingredients! They are gluten free and can be eaten hot or cold, so they make a great meal prep!
Ingredients-
- 12 ounces uncooked brown rice noodles 
- 1 pound ground beef 
- 1/2 yellow onion 
- 1 carrot julienned 
- 2 tbsp olive or avocado oil 
- 6 cloves garlic 
- 1 tsp minced ginger 
- 1/4 cup coconut aminos 
- 2 tbsp bone broth broth 
- 1 ½ tbsp rice vinegar 
- 2 tbsp toasted sesame oil 
- 1 tbsp maple syrup 
- 2 tbsp tahini 
- 2 tsp sriracha 
Directions-
- Bring a large pot of bone broth and water (I do 1:3 ratio) to a boil and cook the pasta according to package instructions. 
- In a separate pan put 1 TBSP oil, minced onion, and ground beef. Brown and set aside. 
- Mince the garlic very finely or use a garlic press to get it super small since we won’t be blending up this sauce. 
- Add the minced garlic to a pan with the neutral oil. This can be avocado, olive, or refined coconut oil. 
- Saute until the edges of the garlic look golden brown. 
- Meanwhile, whisk together all of the remaining sauce ingredients in a bowl until there are no visible clumps of ginger and the tahini is spread throughout. 
- Pour the sauce into the pan with the garlic and mix well. 
- Let simmer for 2-3 minutes or until the sauce thickens slightly. Add your ground beef mixture and julienned carrots. 
- When the pasta is done cooking, drain, rinse with cold water, and combine with the sauce. 
- Garnish with scallions, chili oil, crushed peanuts and enjoy!
